Tzatziki

- 500 ml Greek Yoghurt
- 1 cucumber
- 1 small carrot
- 3 tbsp extra virgin olive oil
- 4 tbsp vinegar white wine
- 1 tsp chopped dille
- 2-3 cloves garlic depending how garlicky you want it
- salt & pepper
Grate the cucumber with a box grater. Use the biggest holes for a better texture.
Put the cucumber in a bowl and add a pinch of salt. Set it aside for a few minutes and let it release its moisture.
In the meantime, grate the carrot (same as the cucumber) and mince the garlic and dille.
Cucumber: Squeeze out the excess liquid with a cheese cloth or kitchen towel.
Combine and mix all the ingredients until a nice creamy sauce. Season with salt and pepper.
Drizzle a little bit of olive oil and add a kalamata olive on top!
- Feel free to exclude the grated carrot if you want to make the traditional version. I can only promise you that it's worth it to include it!
