Tomato Gochujang Udon

Ingredients
- 3 packs udon noodles pre cooked - I use vacuumed package
- 2 tomatoes small pieces
- 1 carrot sliced
- 1 onion chopped
- handful mushrooms sliced
- 2 gloves garlic minced
- 1 big bell pepper red, orange or yellow
Gochujang sauce
- 1 can (70 g) tomato paste
- 1-2 tbsp gochujang depending on your spice level preference
- 1/2 cup plant based milk or heavy cream
- pasta water
Heat olive oil in a large pan over medium-high heat. Add carrots first and sauté for 2-3 minutes. Then add onion and bell pepper and cook for another 2-3 minutes. Add mushrooms and garlic and sauté until the vegetables start to soften.
While sauteing your vegetables, cook the udon according to the package instructions. Then drain and set aside.
Add gochujang, tomatoes, tomato paste and pasta water. Mix well and let it simmer for 1-2 minutes.
Add the plantbased milk (or heavy cream), some salt & pepper to taste and mix thoroughly until a nice smooth sauce.
Add udon and mix until its coated by the sauce.
Sprinkle some parmesan on top and enjoy!
