Cut the aubergine and zucchini in slices (about 1 cm thick) and cut the bell pepper in big chunks.
Heat a large pan on high heat. Brush the vegetables with olive oil on both sides. Place it on the pan and let it stay for about 5 minutes before moving or turning them.
Turn them around if the vegetables have nicely browned lines and cook for another few minutes.
Combine minced garlic, parsley and pepper&salt to taste with the olive oil.
Brush vegetables with the mixture.
Grilled fish
Put flour on a big plate and mix together with garlic powder and dill.
Clean and pat dry the fish fillets with kitchen paper. Season the fish with salt and pepper on both sides. Then coat it with the flour mixture by placing it on the plate.
Heat the pan first over medium heat. Then add oil.
Gently place the fish fillets into the pan. And sear for 6 minutes (3 minutes on both sides), until golden brown. When done, carefully place the fish fillets on a plate.
Add butter to the same pan. Following by adding the parsley and minced garlic. Stir around and add a splash of lemon juice.
Pour the butter mixture on top of the fish fillets.
