Cucumber Sandwich

IngrediĆ«nten  

  • 4 slices sandwich bread
  • 1/4 cucumber
  • 3 tbsp greek yoghurt see note 2
  • 2 tbsp dill
  • 2 tbsp garlic powder
  • salt & pepper to taste
  • lemon juice

Instructies 

  • Peel the cucumber and slice it thinly. Place in a bowl and add a little bit of salt. Set it aside to let it release its liquid.
  • Spread:
    Mix together the Greek yoghurt, chopped dille, garlic powder, splash of lemon juice and salt & pepper in a bowl.
  • Spread the mixture on one side of each sandwich bread.
  • Pat dry the cucumber with kitchen towel. Layer the sandwiches with the sliced cucumbers. Then top with the remaining sandwich bread.
  • Cutting the sandwiches:
    Option 1:
    Cut off the crusts of your sandwiches. Then cut the sandwiches in quarters. (see note 1)
    Option 2:
    Cut the sandwiches in two diagonally.

Notities

Note 1:
Cut the crusts off if you are making high tea sandwiches. This will make your sandwiches look delicate and easier to eat.
Note 2:
I use Greek yoghurt for this recipe for a healthier twist. If you like a thicker consistency, feel free to use cream cheese instead.
