Caesar salad with tofu

- 1 head romain lettuce
- 1 yellow bell pepper
- croutons
- parmesan cheese flakes or grated
Dressing
- 2 tbsp greek yoghurt
- 1.5 tbsp mayonnaise
- 1 tsp dijon mustard
- 1.5 tsp worcestershire sauce
- 1 tsp red wine vinegar
- 1 glove garlic
- handful parmesan grated or powder
- salt & pepper
Tofu crumbles
- 150 tofu (minced/crumbled)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- salt & pepper
- 1 tsp olive oil
Make the tofu first:Pat dry the extra firm tofu with a kitchen towel. Place in a bowl and break the tofu into pieces/crumbles with your fingers or fork. Add in garlic powder, salt & pepper to taste, smoked paprika and olive oil. Mix it well until the tofu is covered in the spices. Heat a little bit of olive oil in a pan. Add the tofu pieces into the pan and cook until lightly crispy and browned. Stir occasionally. Set aside until use.
Take a big bowl and combine all the dressing ingredients. Whisk until smooth. Taste the sauce and adjust if needed before you mix it with the salad.
Cut romain lettuce in bite-sized pieces and bell pepper into cubes.
Add lettuce, bell pepper, tofu pieces, croutons and parmesan cheese into the bowl and mix thoroughly.
