Caesar salad with tofu

IngrediĆ«nten  

  • 1 head romain lettuce
  • 1 yellow bell pepper
  • croutons
  • parmesan cheese flakes or grated

Dressing

  • 2 tbsp greek yoghurt
  • 1.5 tbsp mayonnaise
  • 1 tsp dijon mustard
  • 1.5 tsp worcestershire sauce
  • 1 tsp red wine vinegar
  • 1 glove garlic
  • handful parmesan grated or powder
  • salt & pepper

Tofu crumbles

  • 150 tofu (minced/crumbled)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • salt & pepper
  • 1 tsp olive oil

Instructies 

  • Make the tofu first:
    Pat dry the extra firm tofu with a kitchen towel. Place in a bowl and break the tofu into pieces/crumbles with your fingers or fork. Add in garlic powder, salt & pepper to taste, smoked paprika and olive oil. Mix it well until the tofu is covered in the spices.
  • Heat a little bit of olive oil in a pan. Add the tofu pieces into the pan and cook until lightly crispy and browned. Stir occasionally. Set aside until use.
  • Take a big bowl and combine all the dressing ingredients. Whisk until smooth. Taste the sauce and adjust if needed before you mix it with the salad.
  • Cut romain lettuce in bite-sized pieces and bell pepper into cubes.
  • Add lettuce, bell pepper, tofu pieces, croutons and parmesan cheese into the bowl and mix thoroughly.
