Caesar Salad with tofu crumbles

I always thought this salad has something to do with the Roman empire, due to its name. But in fact it was invented in Mexico by an Italian man named Caesar Cardini. It was said that Caesar was short of ingredients, so he used al he had to create something in order not to disappoint his customers.

This story sounds so similar to me, because that is also how I cook at home. Adding left-overs to my dishes in order not to waste any.

This caesar salad with tofu is full of flavour, textures and crunch and an easy way to add some vegetarian protein to your greens. The homemade dressing is Greek Yoghurt based. Everytime I make caesar salad I only have to buy romain lettuce, because the rest of the ingredients are always kept in stock in my fridge or kitchen. The perfect salad for lunch or a busy weeknight!

On the side we always pair it with toast or bread. Sometimes we have some extra protein too, such as vegetarian chicken schnitzel.

Caesar salad with tofu

Ingrediënten  

  • 1 head romain lettuce
  • 1 yellow bell pepper
  • croutons
  • parmesan cheese flakes or grated

Dressing

  • 2 tbsp greek yoghurt
  • 1.5 tbsp mayonnaise
  • 1 tsp dijon mustard
  • 1.5 tsp worcestershire sauce
  • 1 tsp red wine vinegar
  • 1 glove garlic
  • handful parmesan grated or powder
  • salt & pepper

Tofu crumbles

  • 150 tofu (minced/crumbled)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • salt & pepper
  • 1 tsp olive oil

Instructies 

  • Make the tofu first:
    Pat dry the extra firm tofu with a kitchen towel. Place in a bowl and break the tofu into pieces/crumbles with your fingers or fork. Add in garlic powder, salt & pepper to taste, smoked paprika and olive oil. Mix it well until the tofu is covered in the spices.
  • Heat a little bit of olive oil in a pan. Add the tofu pieces into the pan and cook until lightly crispy and browned. Stir occasionally. Set aside until use.
  • Take a big bowl and combine all the dressing ingredients. Whisk until smooth. Taste the sauce and adjust if needed before you mix it with the salad.
  • Cut romain lettuce in bite-sized pieces and bell pepper into cubes.
  • Add lettuce, bell pepper, tofu pieces, croutons and parmesan cheese into the bowl and mix thoroughly.
