Salad with figs, goatcheese & smoked salmon!
Beautiful looking and surprisingly delicious salad that is perfect for a light lunch or dinner! This savoury & sweet combination is a very nice food pairing for if you are craving both!
Figs have such wonderful health benefits. It's highly nutritious and an excellent source of prebiotics, which improve overall gut health. As well as a good source of both calcium and potassium. No wonder why I see more and more people eating it. Combining figs with arugula lettuce will give you a nice fresh, sweet and tangy flavour.
I use goatcheese for this recipe, because that is the perfect friend for figs. A pair that your palate definitely will enjoy!
For the savoury part I like to add some salmon on top. The old classic goatcheese-salmon combo will never let you down!
All flavours together make such an incredible and elegant salad!
Goatcheese Fig Smoked Salmon Salad
Ingrediënten
- 100 gr arugula lettuce mix
- 2 figs
- 100 gr goatcheese
- 100-150 gr smoked salmon
- 150 gr cherry tomato
- 3-4 tbsp balsamico dressing
- 2 small radish
- honey to drizzle
Instructies
- Wash lettuce and other veggies before use.
- Place arugula lettuce mix on a plate. Drizzle some balsamico dressing on top.
- Thinly shave the zucchini lengthwise with a vegetable peeler or mandolin. Simply curl up the zucchini ribbons with your finger and place them on top of the arugula.
- Cut cherry tomatoes in half and thinly slice the radish. Place them on the salad mix. Make sure you divide all the toppings well on the plate. That will give your salad a nice and appetizing look.
- Then spread the goatcheese on top.
- Gently curl up the smoked salmon slices and make a nice rose. Put the rose in the middle of the salad.
- Cut the figs in half and then from both pieces into 3 pieces. Place them on the salad.
- Drizzle a little bit more balsamico dressing on the salad. Finish it with a drizzle of honey on the figs.
