Tomato Gochujang Udon
These Gochujang Udon Noodles are on another level! Spicy, sweet, savoury and tomatoey. Satisfying and full of flavours.
I love this dish so much, because it's a fusion dish, but it also takes me back to my childhood. Growing up, we ate a lot of spaghetti bolognese. It's one of those nostalgic dishes that warms your heart and brings back memories. This gochujang fusion dish gives me the same feeling, but with a new twist.
Vegetables
I used vegetables that I also put in my spaghetti bolognese: carrots, bell pepper and mushroom. These are also ingredients I always have in my fridge. Feel free to use the veggies you have in your fridge.
Protein
The last time I made this dish I added some leftover beyond ground meat. It was very delicious and I think I will continue doing that for the next times! If you like, you can also try it out with ground beef.
On the side
If you are planning not to add protein into the dish, try to add some protein on the side. Great examples are grilled salmon, meatballs or grilled tofu.
Udon noodles
Udon noodles are my number one choice for this recipe. It's chewy and slurp-able. I love how the sauce sticks to it and coats the noodles and allows every bite to be flavourful and saucy. What also works is spaghetti pasta.
Tomato Gochujang Udon
Ingrediënten
Ingredients
- 3 packs udon noodles pre cooked - I use vacuumed package
- 2 tomatoes small pieces
- 1 carrot sliced
- 1 onion chopped
- handful mushrooms sliced
- 2 gloves garlic minced
- 1 big bell pepper red, orange or yellow
Gochujang sauce
- 1 can (70 g) tomato paste
- 1-2 tbsp gochujang depending on your spice level preference
- 1/2 cup plant based milk or heavy cream
- pasta water
Instructies
- Heat olive oil in a large pan over medium-high heat. Add carrots first and sauté for 2-3 minutes. Then add onion and bell pepper and cook for another 2-3 minutes. Add mushrooms and garlic and sauté until the vegetables start to soften.
- While sauteing your vegetables, cook the udon according to the package instructions. Then drain and set aside.
- Add gochujang, tomatoes, tomato paste and pasta water. Mix well and let it simmer for 1-2 minutes.
- Add the plantbased milk (or heavy cream), some salt & pepper to taste and mix thoroughly until a nice smooth sauce.
- Add udon and mix until its coated by the sauce.
- Sprinkle some parmesan on top and enjoy!
