
Zucchini Salmon Pesto Pasta (ravioli)
This delicious and easy to make salmon pesto pasta is such a great dish to make for a weeknight dinner with your loved one! You can use store-bought pesto, but I promise it's delish with my homemade pesto!
For the greens I used zucchini! It's easy and fast to prepare, budget-friendly and healthy!
Substitute ravioli: penne or rigatoni are great options too.
Zucchini Salmon Pesto Ravioli
- 5 tbsp homemade pesto
- 300 gr ravioli
- 300 gr salmon
- 100 gr sundried tomatoes
- 1 zucchuni (cut into half moons)
- parmesan cheese
- handful pinenuts
- handful arugula
Cut zucchini into half moons and grill them on a pan until both sides are slightly golden.
Cut salmon into bite size pieces and season with salt. Then cook the salmon in the same pan as the zucchini for about 5 minutes until you see a nice golden colour.
In the meantime, cook the ravioli according to package instructions.
Add in the cream and pesto to the zucchini and salmon. Stir around. Then add sundried tomatoes and a little pasta water to thicken the sauce.
Drain the ravioli and add it to the sauce.
Serve with some arugula on top. And sprinkle it with parmesan cheese and pinenuts!
