Homemade Pesto
Very easy to make basil pesto recipe! With just a few ingredients and a food processor and you are ready to go.
We just love to eat pesto in our household, because you can use it for so many things. Sandwiches, pasta, salads, appetizers, pizza or as a marinade for fish and meat. Since we have a basil plant at home, we make pesto on a weekly basis and keep it for a few days.
We used to buy store-bought pesto, but now we cannot go back anymore. Homemade pesto is so convenient, because you can adjust it to your taste, your preferable thickness and it's very easy and quick to make.
Note:
Don't be afraid to adjust the amount of the ingredients. It's all about how you or your family likes it. In our household, we prefer a stronger cheese flavour than garlic flavour, so we only use 1 glove. If you like garlic, you can use more. And use more or less olive oil to control your preferable consistency.
Homemade Pesto
Ingrediënten
- 2 cups basil
- 1/2 cup pine nuts
- 1/2 cup extra virgin olive oil
- 3/4 cup parmesan cheese
- 1 glove garlic
- 1 tbsp lemon juice between 1-3 tbsp to taste
Instructies
- Combine basil, pine nuts, cheese and garlic into the blender. While the blender is running, add in olive oil a little by little. At the end add lemon juice.
- Taste the pesto and adjust if needed. By adding more cheese the pesto will be creamier. And by adding more olive oil it will be thinner.
- Put pesto in a jar and drizzle the top with some olive oil. You can store pesto for up to one week. Everytime you have used a bit from the pesto, drizzle the top with olive oil again. This way you can keep it for longer and fresher.
