Dutch Mashed Potatoes - Hutspot (stamppot)

Who doesn't love mashed potatoes?! Stamppot (Hutspot) is the ultimate comfort food and our family eat it all year round.

Stamppot (mashed pot) is a traditional dish in the Netherlands made from mashed potatoes and mixed vegetables. There are different kinds of stamppot. And this time I'll show you how to make Hutspot.

For a classic Hutspot you'll potatoes, red carrots, onion and some spices. You can serve hutspot (or other stamppots) with smoked sausage, Dutch meatballs (Oma's gehaktballen) or stew meat and gravy.

In our household we love to eat Hutspot with (vegetarian) smoked sausage or fish without gravy. When mixing the 'pot' we love to add grated cheese too.

Equipment

  • potato masher

Ingrediënten  

  • 500 gram potatoes use high-starch potatoes, see note 1
  • 500 gram carrots
  • 1 big onion
  • 25 gram unsalted butter
  • ≈ 50 ml milk i use plant based milk, see not 3
  • peper and salt
  • 1 bay leaf

Hutspot spices

  • 1.5 tsp nutmeg
  • a pinch paprika powder
  • 0.5 tsp cumin
  • 0.5 tsp Turmeric

Instructies 

  • Peel the potatoes and cut in equal chunks. Rinse under water before boiling. Put the potatoes in a large pot and add water. Once the water is boiling add some salt in the pot.
  • In the meantime, peel and cut the carrots in pieces and the onion in half rings. Put the carrots, onion and the bay leaf inside the pot. And boil for around 20-25 minutes.
  • Once the vegetables are boiled soft, drain out all of the water and take out the bay leaf. Let the vegetables boil dry.
  • Mash the potatoes, onions and carrots with a potato masher. The mixture doesn't need to be very smooth. You can keep it rough with pieces or little chunks.
  • Add the butter and let it melts. Then add the milk and all the spices and mix everything together. See note 4.
  • Taste the potatoes and season with salt and pepper to your liking.

Notities

  1. Use high-starch potatoes, such as Russet potatoes.For the Dutchies: use kruimige aardappelen.
  2. This recipe is for 2 people, but I always make more for the day after or for meal prep. 
  3. Use plant based milk (oat milk for example) instead of diary milk as substitute.
  4. You can use less or more milk depending on your desired consistency.
